    Not an expert in tofu-making, but I believe that if one does use an acid as a coagulator, there is aftertaste, unlike using calcium sulfate or nigari (magnesium chloride and calcium chloride), which are tasteless (and nontoxic, at least for the amount used in tofu). By the way, why not try using calcium sulfate (the edible kind, not the industrial kind, since the latter may not be pure)? This way, your tofu also has a high calcium content, just like diary products.
