dude you've got a cool job.... Setting stuff on fire instead of doing chemical research (but also sometimes boring) stuff.
Maybe you could show that the water in the P2O5 experiment becomes quite acidic as well, although indeed, not a spectacular thing to show.
another thing you may be able to show is the conversion of energies, e.g. electrical energy to electrolyse water, with the resulting (small) boom.

Heh, the exploding coffee tin trick.
I used to have a middle school teacher that did that alot, alot of the time without telling us.
