Jess shows what to do with leftover cranberries stacked in your freezer, and enjoys being a dork in front of the camera with a new haircut.

NOTE: The cranberries become very gelatinous as they settle. If you make the Cranberry Upside-Down Cake, it will be a lot firmer once out of the fridge. In the video you can see it is a little soft. This can also be adapted to make a larger "cake" in a 9/12" pan.

Cranberry Cobbler:
Soak 1 cup dates 2 hrs

Process: 2 cups nuts (1c hazelnuts, 1c cashews in this case) with 1/2c soaked dates, tiny pinch salt, 1/4 tsp cinnamon, 1/8tsp nutmeg. Set aside.

Blend or process: 2 cups frozen cranberries with 1 large apple until smooth.

Put together how you see in the video.


Cranberry Almond Spinach Salad:

sprinkle 1/2c slivered or crushed almonds and 1c sliced or dried cranberries over 4-6c spinach. Top with sweet onion dressing, or thinly sliced red onion if dressing is not your thing.

    Oh yum, strawberries would be great. I will probably try the same recipe with blackberries or raspberries, only use less dates (if any at all) due to the berry's natural sweetness. It would not hold together as well as with the cranberries, as cranberries are very gelatinous :)
