I came up with this vegetarian eastern mediterranean version of the traditional beef carpaccio when the carpaccio craving kicked in one night...the layered lightly pan-fried vegetables are topped with tossed arugula, drizzled with tahini sauce and sprinkled with toasted pine nuts. Appetizer, salad or made into a sandwich...this dish is delicious and easy to make...plus it looks beautiful on your table top...enjoy!
