I don't understand how people can live without putting beef base in this sauce! After you burn off the brandy and add cream, try a tablespoon of Superior Touch brand beef base (it's better than bouillon). You need to give it just a few more minutes to reduce but my gawd you could eat it with any course...but especially steak

if he use low grade sirloin steak, i believe the steak will turn like rubber band, the heat from the pan in just too over, (we can see the sinew start to shrink too much)

If you watch closely he places the cooked steak on the plate he used for the raw meat
That's all kinds of wrong. He just contaminated that steak. Then when he places it back in the skillet he contaminates the sauce. Doesn't look like a professional cook let alone a Chef. That is a beginners mistake. Make sure to use clean plates in between the raw and cooked stage. Or it is only a matter of time before you make someone sick. Watch after the 43 second mark out of the pan onto dirty plate.

@parrotguy Hello, it's beef! Did you know that steak tartare is completely raw and completely safe to eat? Obviosuly, you know nothing about beef.
