This series courtesy of the Online Spanish Grocery www.IbericDelice.com describes the steps required to prepare a Spanish lentils recipe. This spanish recipe consists of cooking lentils with a chorizo, and then mix them with a sauce prepared frying garlic in olive oil with flour, actually browning flour in the hot olive oil.

Fry garlic in hot olive oil (sofrito) in a steam pressure pan, then add the lentils and the chorizo. Season with spanish red pepper pimentón (or paprika), salt, black pepper. Cover with water the lentils.

Cook the lentils for 5 mns, remove them from the pan if necessary in order to avoid extra/over cooking.

Prepare the "sauce": in a small deep pan with 0,5 cm of olive oil, heat the oil, place the garlic pieces with their skin (just remove the hard tip) and fry them 2-3 mns, then add 2-3 spoons full of flour, stirr continuosly until the flour gets golden almost brown shall take 2-3 mns more. Once it is golden, remove the pan from the fire and avoid burning the flour.
