Oscar's "Arroz Con Pollo" or "Rice & Chicken" - Colombian recipe

Ingredients:
1 chiken breast
Garlic Powder - to taste
Cilantro Powder - to taste
Achiote (food coloring) - to give the rice a more yellowish color
1/2 red pepper - cubed
1/2 green pepper - cubed
1 medium sweet onion (white) - chopped
2 garlic cloves - chopped
2 hot dogs - sliced
2 cups of rice
1/4 pound of vegetable mix (carrots & peas - or whatever you like)

-Boil water
-Add the chicken breast and let it cook until fully cooked (Approx 30 mins) *Do not let the water dry up (you will use the remaining water later on to cook the rice)
-take the chicken breast out, let it cool and shred the chicken
-put the remaining water aside and in the same pot you can add olive oil and stir fry the onion, garlic cloves, peppers and hot dogs for about 5 mins.
- Add the shredded chiken and stir until the chiken begins to brown (do not let it sit as it will burn)
-When the chicken is a bit brown add the rice and wait until it gets a bit "crunchy"
-Add pepper (powder) and salt to taste
-Add water (the water you cooked the chicken breast in) and wait until it boils
-When the water is boiling you add the color (achiote) and the 1/4 pund of vegetables (we used carrots and peas)
-When the water dries up bring the heat down to low and cover the pot and let it sit for about 10 mins (check on it to make sure it doesn't burn)
-Serve and enjoy!
PS: you can also add raisins to this recipe when you add the vegetables at the end and it tastes YUMMY, we just didn't have any today :(
