Hey, I work at a coffee shop up in Yellowknife NWT, I just learned how to make hearts! I was wondering, why do you swirl the milk around the crema, right before you begin to shake it back and forth to bring out those leaves?

sorry for the late reply but basically it is to make sure the crema get's well spread out, so when you start ur latte art there will be no gaps between the milk and the crema.
