what chords do you use at 2:50 - 3:10?

They're 9th chords without the 3 or the 7.
So the first one is C (octaves) G D
second one is Ab (octaves) Eb Bb
third one is Bb (octaves) F C
last one is F (octaves) C G
The two higher notes I play an octave above the left hand ones. Hope this helps

They would be sus2's but the 9th's are always a '9' away from the root, disqualifying them as sus 2's.

that depends. According to classical theory yes, according to modern theory, the order of the notes are irrelevant, but I get your point (the voicings Steve uses on the guitar in the original recording are typical sus2-voicings)
