Try this handy, quick recipe for a tasty gluten-free flatbread that is perfect for sandwiches, cut into triangles for dipping or used as a pizza crust. Boiled rice, Quinoa Flakes and Olive Oil! Easy as 1, 2,3

1 cup boiled, cooled rice (any grain)
1 cup quinoa flakes
1 tbsp olive oil

Mix together rice and quinoa flakes. Add the oil and form into a sticky dough ball. break the dough into smaller balls and flatten on a cookie sheet and bake for approximately 10 minutes in a 375 degree oven until golden brown. For pizza crust, flatten the entire batch onto a cookie sheet and bake for 20 minutes in a 375 degree oven until golden brown. To avoid sticking use parchment paper.

  • Hi Sanaa. This looks wonderful. Can I use brown rice with the quinoa? I would really prefer to keep it all whole grain.

  • @hipretty Yes. Boil the brown rice until almost mushy and then mix it with the quinoa. Let me know if you have any other question.

  • @jistutz I never tried millet, but I don't see why not. Just make sure the millet flour is soft. I would mix the flour with equal amount of water to soften it before I would mix it with the cooked rice. Let me know how it comes out.

  • HI! I'm wondering... can you use a different grain besides Quinoa? I have Millet flour that I'd like to use.
