Duck isn't the first meat you'd associate with Christmas but it's a worthy alternative to turkey or goose and it goes perfectly with sweet, spiced mulled wine. We serve our duck with brussels but instead of cooking them whole we've shredded them, which is a great way of introducing them to people who aren't convinced about how good they can taste!

    You sure buy large quantities of potatoes at once in the UK.. The ingredients list on your website reads "bag of medium potatoes (750kg)"

    When you cook wine, or any other alcoholic drink, the alcohol burns away and you get left with all the taste, but none of the alcohol. Failing that, you could use grape juice.

    I recall a recipe where you made crispy duck with a pesto sauce. i tried it and it turned out absolutely brilliantly! I added my own twist by seasoning with chinese 5 spice in addition to salt and pepper. :) Thank you!
