Ackee & Salt fish: A Jamaican Delicacy

INGREDIENTS:

1/2lb Saltfish (dried, salted codfish)
12 fresh ackees or 1 (drained) can of tinned ackees,
1 medium onion,
1/2 tsp black pepper,
3 tbsp of butter OR cooking oil
1/2 hot chilli pepper (ideally Scotch bonnet)
1 Sweet pepper,
1 chopped tomato,
1 sprig fresh thyme or 1 tsp dried thyme

OPTIONAL INGREDIENTS:-
2 cloves garlic,
4 scallion (or spring onions)
6 slices of bacon

PREPARATION
Cover saltfish in cold water. Let soak overnight (minimum 8 hrs) changing the water several times (this removes most of the salt)
Bring a pot of cold water to the boil and gently simmer the fish for 20mins (until fish is tender).
Chop the onion, sweet pepper, chilli pepper (scotch bonnet) and tomato.
Remove the fish from the water and allow to cool.
Remove all of the bones and skin then flake the flesh of the fish.

COOKING
Melt butter or heat oil in a frying pan and stir fry the onion, black pepper, sweet pepper, chilli and thyme for about 3 mins.
Add the tomatoes and flaked fish and stir fry for another 10mins

Add the ackee and cook until hot throughout. Stir gently to avoid breaking up the ackee.

Serve with yam, green banana, Irish potato or fired dumplings.

  • Great video but Ackee and Saltfish is not a delicacy. Its the national dish but we have all the time. Mostly when ackee is in season.

  • @Zandoraful Thanks for watching and your feedback is greatly appreciated. I use the term delicacy even though the dishes maybe eaten daily or are national dishes since my channel seeks to represent each island on a higher level. We as West Indians have a very rich culture and too often we down play it to highlight other cultures or we are misrepresented in the media. This is my small part in trying to uplift and showcase our culture in a positive and attractive light.

  • @Bimshirebabe Okaaays....I don't want u to feel like I don't appreciate what you're doing for West Indian culture. But saying that it is a delicacy when it is not is not down playing Jamaican culture, its just incorrect information. I think West Indians are very colourful people. I don't think we down play this fact in anyway, as a matter of fact, we are very proud and vocal about where we're from. I agree that we are often misrepresented in the media. Keep up the good work.
