I always enjoyed the cinematography of this scene as well - love seeing the "guts" of the supperclub in action. Well done.

yeah, they literally walked in a circle through the kitchen. In real life they did walk through the kitchen in order to get to the inside of the Copa, so I'm guessing the actual setup was pretty different. Scorsese and his cinematography/camera team were probably just making the best of what they had to work with. It just wouldn't have the same excitement to it if they didn't circle through the kitchen.
