Vanilla buttercream (vegan) icing with coffee and Everclear....yummmmm! Recipe below:

• 4 TBS of coffee
• 4 tablespoons Everclear
• 2 tablespoon pure vanilla extract or almond extract
• 1/2 cup non-hydrogenated shortening
• 8 cups organic confectioners sugar
• 2 tablespoons water

  • @michellesvideosuk Sorry for the late response. I am in the process of revamping my YouTube. Shortening is a fat that is solid at room temperature, most commonly Crisco. Crisco is not vegan so I use Spectrum non-hydrogenated which is not made with animal fat. Everclear is high proof grain alcohol, usually reserved to drink, but can be used to soak things with. It is not very tasty on its own but great when paired with things.

  • Lol...it is a pretty harsh alcohol as I am sure you read but it adds another dimension to the cupcake with the coffee!
