This is a western version of stir fry. I know that from many well known Asian Chefs and Cooks, they usually would not add salt to their stir fry as mainly because light soy sauce would be added for its salty flavor along with some dark soy sauce to add color as dark soy sauce isn't as salty as light soy sauce. I personally think Ramsay added too much sesame oil as sesame oil is very potent. I would have added about 1/2 to 1 teaspoon max of sesame oil to this as well as some Sichuan peppercorns.

@josestevam Sesame seed oil and groundnut oil while mixing. Also groundnut oil in the wok.
