I don't know about your theory on Buffy's dream but you make a very good point, and here I thought it was all just a side effect of Buffy's love of cheese.

Actually, Joss Whedon stated that he wanted one completely random thing in an otherwise forewarning and symbolic episode.

Whedon explains: "...the Cheese Man—meaningless. Why? Because I needed something in the show that was meaningless, because there is always something in the dream that doesn't make any sense at all. In this case it was the Cheese Man. He confounds everybody because of that, and people ascribe him meaning.
