Its not a special effect, the temperature difference is so great that the heat from your hand creates a small pocket of air that protects your hand for a second. I've had mine in to my knuckles. Mine was in and out in under a second, anything longer than that and freezing will take place quickly.

his finger is being protected by an effect called the "Leidenfrost Effect" as described by michaelcoolen..
a similar effect is when you drop water on an extremely hot surface, it turns to small beads of water instead of vaporizing instantly...
here you notice when the liquid nitrogen drops to the table they turn to beads and not a pool of liquid... (0:15) this is because to the liquid nitrogen, the table surface is extremely hot (recall the boiling point of liquid nitrogen)

All you people are retarded. I know what I'm doing. I work with LN2 every day of my life and know what I can and can't do with it. As for science books telling you not to put your body parts in: that is for you uneducated philistines that know nothing about nothing. At one time science books touted the immense benefits of amphetamines and other terrible things. Just because you read it in a book doesn't mean it's right.
