To Bire, or not to brie, that is the question.
Personally I love good brie, especially when it's fully matured and offers a delightfully creamy consistency and nice ripe smell.
Spread on some nice crispy farm house bread and served with a rich full bodied fruity red wine, there's not much will beat it as an indulgent snack or for rounding off a great meal.
There are lots of different types on offer in the supermarkets of course, ranging from the reasonably tasty to the downright insipid. For me the best of the best West Country bries comes from the Sharpham dairies in Totnes where the cheese is made from Jersey milk taken from the estates own heard and matured for up to eight weeks to produce a wonderfully strong flavour reminiscent of the French Brie de Meux.
