I just came back from Uwajimaya (a Japanese grocery store in Seattle, WA) and they sold all kinds of soba noodles. It is true traditional soba noodles are a dark gray color, but don't be afraid to try the other varieties. Uwaji's had the white soba noodles, pink (plum flavored) soba, green tea soba, yam & seaweed soba, and inaka soba (70 % wheat / 30% buckwheat noodles -- great for Westerners who getting used to soba noodles. Please remember to always read the ingredients on the package!.).
