NSCC Baking & Pastry Art students Jacqui Keseluk and Lauren Cameron along with their Chef Instructor Jean-Luc Doridam share their thoughts about the Decadence Competition. Held in February 2011, Decadence is Canada's only national pastry competition and is hosted by Niagara College.

It's a white and Ice Wine and chocolate competition. The competition is sponsored by Inniskillin. Inniskillin is donating some of the Ice Wine. And Belcolade who is a professional chocolate company from Belgium is providing the chocolate. Our job is to come up with recipes and different types of dessert for the competition.

We have 8 hours and we have to make a chocolate centerpiece .75 meters high, 4 french pastries -- 12 of each, as well as 2 themed cakes.

I am probably most looking forward to representing the school and the experience itself with Jacquie and Jean-Luc.

He's [Jean-Luc] a great mentor. He's [Jean-Luc] probably the best chocolatier in Nova Scotia. So I think having a really good coach we're going to have a really good start in the competition.
