Chili

1 lb 97% fat free ground beef
1 med onion, chopped
1 can kidney beans (dark or light)
1 can chili beans
1 can Rotel tomatoes (Mexican style tomatoes with green chilies)
1 can diced tomatoes
1 tbs cumin
1 tbs chili powder
1 tsp red chili pepper flakes (optional to taste)
Salt and pepper to taste

Brown ground beef, add onions and cook until soft. You made need to add a little olive or Canola oil to cook the onion as the lean beef with leave little, if any grease. Add tomatoes and scrape the bottom of the pan. Add rest of the ingredients. Bring to boil, reduce heat to low for 30+ minutes.

  • Next time you buy chilli powder, you might try making sure it says HOT on the label instead of "Mild" or "Medium". I hear it makes a difference. :) *LOL!*
