Sounds like the maker used to do pastry not pizza dough and just combined the talents, as for the sauce/cheese thing, I believe the cheese makes the pizza topping, the sauce is okay but it is there to accent the pizza, without good cheese you dont got a good pizza, you can get by on low grade sauce but not cheese, plus sauceless pizzas are good, i doubt cheeseless ones would be, just giving my 2 cents
