if i remember correctly, it's the lime green color-- not sure if it shows well in this video..lime green for the bottom board, and egg yellow for the smaller one

it's called a foamcore board and you can buy it in craft stores.

i might be wrong but when your making a topsy turvy cake you still need to place each cake on level otherwise you still have a chance of it falling over.
so instead of placing the cakes sideways you must cut a flat area of the cake and then you can place it flat but it will look turned.

i get what you are saying- but for this technique, you dont have to do that. you can have four level cakes, each placed on a wedge - facing opposite ways... you have to anchor the cakes to the wedges--- just be sure to anchor them well and it will hold. ive seen much taller cakes done that way.
