No offence, but technique in this video is a bit fail. The pan was a bit too hot. It smoked. (ie. became very unhealthy). The oild should be hot enough to sear (brown meat) but not to a point where it bubbles and turns viscous on contact with the point. The butter should not have been put into such a hot saucepan that it smoked on contact. It should be melted gently.
