I have heard some of my friends saying that they like "my" caldereta. I want to mention my dear friend Alex specifically. She is the reason why I made this video recipe. Alex vakla! This Pinoy recipe of caldereta is dedicated for you. I hope you like it.
But anyway, beef caldereta is a Pinoy recipe that is very easy to make but takes quite some time. When I was in the Philippines, my average cooking time to make this is 2 to 3 hours. And again everybody has their own recipe for this particular dish. Most people will put some vegetables in it like potatoes and carrots, but I don't. If I want some potatoes, I would cook it separately and serve it on the side. But anyway, you can put vegetables if you want to. I am pretty sure it will turn out to be delicious.
One very important ingredient on this Pinoy recipe is the liver spread. I used the Reno brand when I was still in the Philippines but I couldn't find it here. So I used the liver pate that was available at the Asian grocery store. You can also use homemade chicken liver if you have chicken liver. Just boil it in water, drain the water, and then crush it. As for the meat, you can use goat meat or chicken. I don't know if you can use pork but you can try. I haven't tried pork so I can't really say how it will turn out. And when it comes to what cheese to use, so far, the best cheese that gave me the best result is Eden Cheese made by Kraft. I have been looking for this particular brand but then again, I couldn't find it here. If it's available in your area, you can certainly use that instead of the Velveeta cheese.
The last step on this Pinoy recipe where we put some cooking oil is a secret I got from Uncle Ding. Again, not everybody who cooks caldereta will do this last step. But if you want to try this Pinoy recipe, I encourage you to try that last step and I can assure you that you will be so glad that you did.

i guess what he's doing is fine.. the only problem i have with this is he shouldn't call this dish calderata.. if he said that this dish is "inspired" by caldereta, it would've been fine..
this is not the way caldereta is supposed to be cooked, so i completely understand why some of you were appalled by this.. i guess i'm a little turned off too.. -__-
but lets just give the guy a break.. he's clearly into our cuisine and kudos for him for trying to let the world know about it..

Thanks for sharing! As for my fellow pinoys, let's be reasonable and let him do it his own way. If you don't like how he cooks his caldereta, then just move on to the next video. Hindi nya binabuy, niluto nya kung paano nya alam na lutuin.

This is incredibly wrong. I am a spanish mestizo and I learned how to cook this dish from my grandparents. You have to fry the beef in oil first and make sure its golden brown before you stew in broth and tomato paste. You also use fresh liver that you spice and boil before you chop into your own home made pate. This is disgusting and apalling to years of Spanish culinary history to the filipino people. When do you ever use velveeta cheese in calderetta unless you have no idea !
