If the bike is cold, you have to run it up and down a bit to warm it up and get the oil temp up. After that, if you want to find max hp, you make one run (usually in 3rd gear) from 2 or 3000rpm all the way to red-line. If you are tuning it, you do several roll-on's, lots of acceleration and coasting, pretty much what you saw in the vid. You do that to find how the A/F ratio would look during real world use and the optimum spark curve under varying loads.
