Saucy Mama Southwest Sushi

This is the ultimate tailgate food! Make it ahead the night before, wrap the rolls tightly with plastic wrap, and refrigerate. Then simply slice the rolls into "sushi" pieces right before the party starts! The pieces are easy to hold, and even easier to eat - while you're standing up, of course!

1 lb chicken, cooked and shredded (store-bought roasted chicken tastes great and saves time!)
1 lb bacon, chopped, cooked and drained
15 oz can black beans, drained
7 oz can diced green chilis
2 cups Monterey Jack cheese
4 tablespoons fresh cilantro leaves, chopped
1/2 teaspoon cayenne pepper
2/3 cup Saucy Mama Lime Chipotle Marinade
6 cups prepared sticky rice, cooled slightly
1 cup Mexican-style sour cream
3 tablespoons Saucy Mama Smoky Garlic Mustard
7-8 soft green tortillas
1 avocado, peeled and sliced into thin strips
1 cucumber, peeled and sliced into thin strips

To prepare the filling, mix together first 7 ingredients and Saucy Mama Lime Chipotle Marinade in a large bowl. In a separate bowl, mix rice, sour cream and Saucy Mama Smoky Garlic Mustard. Lay 1 tortilla on a flat surface. Scoop approximately 1 cup rice mixture on top of the tortilla, flattening with fingers or back of spoon until entire tortilla is covered in a thin layer. Spread 1 cup of filling mixture over rice layer in a straight, thin line, near the top edge of the tortilla. Place 1-2 strips each avocado and cucumber on top of the filling. Carefully roll up, starting with the top edge, so that the tortilla ends up looking like a sushi roll. Repeat with remaining tortillas. Slice into pieces and serve immediately, or wrap tightly with plastic wrap and refrigerate up to 24 hours before slicing and serving. Enjoy!
