Red food colouring in water at the bottom. Vegetable oil on top, then throw in a few chunks of alka seltzer. Fake lava lamp in minutes.

The water and the colouring are more dense than the oil, so the oil floats on top of them. When I throw in the seltzer, it falls through the oil and doesn't react until it hits the water. Once in the water, it reacts, releasing bubbles of Carbon Dioxide gas. These bubbles trap some of the water, and together they float up through the oil - that's why we see the red blobs floating in the oil. When the blobs reach the top of the oil, they release the gas into the air, and with nothing to hold them up, they sink back down again.
