the melody from the choir is from "Kōjō no Tsuki", lit. "The Moon over the Ruined Castle" a japanese song written in 1901. But i believe, as @Gandalf930 said, that the lyrics are from the Cherubic Anthem

I repeat once again: this is not Gregorian chanting. Gregorian chanting is the music of western Catholic monks. The choir here sings in an Eastern Orthodox manner and what they sing is called the Cherubic Anthem or Song of The Cherubim.
