I'm going to make cranberry-orange scones with no flour and will make them using my dehydrator.

I use almond meal in place of flour. You may be able to buy it, depending on where you live, but if you can make it if you need to. What is great about almond powder is it has no bleaching process and it is low glycemic, which means it won't convert to sugar in your body and cause blood sugar and insulin problems. It's also very high in fiber and nutrient value.

Add about 2 cups of almonds and a little more than 4 cups of water into a high powered blender. Water is important, not for the scones, but to make almond milk to use at a later time. I will just put it in the refrigerator and use it to make smoothies or a chocolate shake. It's very versatile.

Once you have blended the almonds in the water, you want to pour this through a very fine mesh bag (you can get these online or get these at a Home Depot. They are used to strain paint there and are less expensive at Home Depot). Drain the milk out into a container and the almond meal will remain in the bag. Work the milk out of the bag for a few minutes and you can get the meal pretty dry. Almond milk will last about a week in the refrigerator. It is actually very satisfiying snack and contains lots of protein and amino acids, so just a little glass can satisfy your hunger.

The almond meal is now ready to add the ground flax seeds (I grind mine in a coffee grinder). Mixt it up with your hands and add the coconut oil as well. Coconut oil is great for your skin and hair and also helps decrease cholesterol in your body.

Next, add some dates, cinnamon, salt, dried cranberries and about 2 teaspoons of orange zest. You can check the recipe on my website for more detailed measurements. Mix this all by hand.

Take half of the mixture and roll it into a big log. Flatten it down into a scone thickness (they are not going to rise).

Cut them at an angle to shape them into a triangular shape. Place them right on the dehydrator tray. You should get about 16-18 scones out of this recipe. You don't cook them, you only dehydrate them, so you can warm them in the oven if you want to as well. They will retain their nutritional value even more this way.

Happy Holidays!

  • You SHOULDN'T use paint strainers from home depot and other DIY/home improvement stores-those bags are industrial grade and may contain chemicals/lead etc-which are not food safe! please buy only food-grade strainers!! Other than that, I really enjoyed your video-I've been trying to find a healthier way to make cranberry orange scones and I really liked your idea of using almond meal! Great idea/great video! Keep those recipes coming!

  • Nice Videos!!

  • hahaha how cute! This recipe looks awesome. I wish I could try these, My dehydrator dropped dead. I didn't have it that long either!

  • Can I just ask if you soak your almonds first which I have heard is very important when eating RAW foods :)
