There are two ways that I know of. For the videos that I made, I did it the quick and dirty way. Simply configure your Xbox to output party / game chat via your TV speakers. Obviously, the audio quality done this way is subject to poor mic, noise and lag.
The better and proper way to do it is to record voices using a seperate device such as a PC or tape recorder near the actor. Problem is that all actors are from around the world, it is hard to assume that everyone has the right tools.
