I think in Japan they desolve the nigari in a tiny bit of water first and then add it to the soy milk, stir very quickly and then stop. I think it'd curdle better that way.

very nice, the Tortoro is a nice touch, although i was very alarmed when he almost drowned. I am looking into buying a soymilk machine. which model is that? thanks!
