Gluten-free cheesecake made with ricotta, so fairly low in fat too. You can use higher fat cream cheese and digestive biscuits /graham crackers/gingernuts - whatever.

Ingredients

1 packets of biscuits (gluten free digestives, normal digestives, graham crackers etc)
250 grams cream cheese (ricotta, mascarpone, philadelphia or any other cream cheese you want to use)
50 grams Sour Cream
2 tablespoons sugar
2/3 tsp cornflour
1 egg
Handful of sultanas (optional)
1 lemon or two tablespoons lemon juice ready squeezed
Vanilla essence
Large knob of butter (1 to 2 oz - or whatever that is in grams - I have no idea!)

You also need
1 7/8 inch sandwich tin, or the lid of a pyrex dish
Foil
A mixer
a bowl
An oven!

  • @CommentorX digestives are like sweet, round graham crackers, I think. Not sure if there is an exact US equivalent.

  • So are you gluten intolerant? If so, how did you find out? Did you have to go through some long, drawnout testing procedure? I've never met anyone with that problem, so I don't know what you have to go through in the beginning.

  • @CampKohler Part GP and part independent allergy testing. And I was already an adult. I was quite ill at college but the allergies and intolerances were not diagnosed until a few years after that.

  • Elise,am I correct to say Sultanas are like USA Raisins? If so,Sultanas is a new one on me.Love ur yellow kitchen,and ur vids.

  • @mudpies4u they are like plump, orange raisins. Think they are made from sweeter grapes.

  • @Eliseharris Wow! Sounds like you had a travail. I used to have terrible hay fever, bringing on a runny nose and itchy eyes whenever the grass pollens exploded here in Sacramento in Apr/May; I lived on anti-histamines. For some reason, it all went away decades ago and barely have a twitch with no pills needed now. I have no idea why. Do you test yourself from time to time to see if your allergy has gone away?

  • For those watching their weight, for GLUTEN-FREE, substitute GLUTTON-FREE. :-)

  • @Eliseharris What I would like to know (if you don't mind blabbing your medical history in public) is how you (or your parents) find out you were susceptable and at what age? Was it something that the docs quickly found or did it take a long time to reach a diagnosis?
