Kostas Katsouranis introduces you some differences between Γειά σou! and Γειά σας!

1 - When we meet someone for the first time, we use Γειά σας!

2 - When we meet someone for the next time, we use Γειά σou!

*Notice that there are some people who prefer to say ''Xárika'' [hárika] and "Geia" [Ya] because they're not so formal.

3 - When Γειά σou! is used with a sense of "goodbye" or "see you next time", use Γειά σou! to refer to 1 individual only (SINGULAR) and Γειά σας! to refer to 2 individuals or more. (PLURAL). In this case, Γειά σou! will be a singular form to say "goodbye" and X Γειά σας! will be the plural one.
