the sounds are samples or realtime synthetized ?

They can be both, you can do synth sounds in SynthLab and export them to miniTamTam (as samples)

can tamtam handle midi or open source?

It cannot currently handle midi but all the TamTam suite is fully open source.

The soundbank is done with samples, it will be eventually possible to load your own samples.
