  • I like to see all these slightly different potato soup recipes. Would you agree that one can just leave soups like that 'not smoothed out'? Being German, or why I don't know, I grew up with nice clear soups with all the recognizable ingredients in there... I just always take a masher for just bits 'mashed' to give more fullness to the soup, but not too much.

    Thanks for posting. I enjoyed it.

  • Looks like a good recipe. Do you think though that I could skip the part where you put it in the blender and just add a bit more broth? I like soups but im more of a stew person. Im a guy so i like chunky stuff. LOL.

  • Delicious! I made for 4 and there were no leftovers :) But I want to make batches ahead of time, so I was wondering how long it would keep in a tupperware in the fridge? Thanks!

  • @steviesuperstar Hey Stevie, I avoid use the stock cubes because they're very high in sodium and they have additives. To make your own healthy non-processed broth I just simmer all the leftover veg trimmings from the week (carrot tops, broccoli & celery stalks, onion whatever I have) in a large pot with water and some herbs, if you ave them. Simmer for a couple of hours and booya you've got veg broth.

    Try it. It's much better for you.
