The purpose of forms is different than sparring. Forms teach three main factors in the ideal phase. The teach rules and principals of motion, teach reverses and opposites, and give examples of each. To summarize, forms teach basics in the ideal phase (the way it should work in a perfect world) while sparring is done to practice basics in the [safe] spontaneous phase (not rehearsed with moving variables.)

How come forms and katas never come into play while sparring? No one would move like this in a real situation.

my personal logic behind katas is that they are made up of techniques that are used in defense situations rather than sparring and should be practiced. Katas are also more traditional. This one is demonstrated slower than usual, so yeah, the sensei wouldn't move like this in a real fight, but if he did it at full speed, then perhaps he would and the movements would become useful. Hope that helps :)
