You're pretty much turning it upside down. It's actually religion that cuts this easy and says "oh gee we can't comprehend this - human intellect is limited, so therefore: it must be god / a god did it". Atheism basically is the rejection of these proof-less hypothesis religious people come up with. It's just saying "I have no F-in idea, but your suggestions bring absolutely nothing but speculation/fuzzy comfort to the table, so I refuse to waste my time on this".
