Kosher (Jewish) and Halal (Islamic) methods of slaughter come from ages of tradition where they animal was killed as quickly and humanely as possible. Of course there are much more humane methods now (stunning) but they haven't changed or kept up with what is humane. There is no need to slaughter animals this way anymore, it's cruel, but their tradition is more important then the animal's wellfare.

This is an old film. This was done when many people were concerned about food safety, and Kosher food is among the safest meat products. The slaughter scenes which today are graphic, were more commonplace. If you worked on a farm as I did, there was butchering; animals were killed for meat. The stringing the cow up immediately is more humane than letting it walk around bleeding to death, as the animal would inhale its blood and choke on it.
