People need to understand the cultural gap between the Cantonese style of cooking and other styles. There is extreme focus put on freshness in Cantonese cuisine, so the things chefs do to attain their desired level of freshness is just as extreme. The chopstick thing only works when it's alive and if it's not done it makes the food bitter. There's no boiled lobster dishes in Cantonese cuisine. It's all done in a wok. We see it as cruel, but other cultures might not feel the same way.
