I make really fluffy eggs using a fork and allowing the eggs to cook for a bit for low heat. =)

I struggle to eat more than 1000 calories on this diet. Does this affect my overall weight loss? Or if I cut back even more on the carb intake?

With the way Tim shows how to do eggs in the microwave I agree, it does tend to be a bit rubbery/not as good as what you showed here. HOWEVER. The same principle applies. Slow. You need to nuke and stir constantly. Every 15-30 seconds stop the microwave and stir, and continue to do so. You'll get nice soft scrambled eggs :) Took me a while to perfect the technique (and been doing it WAY before Tim Ferris' book)

The chef was just showing Tim how easy it is to cook the eggs stovetop; not necessarily implying Tim didn't know that.

Cheese? Olive Oil - Slow Carb Diet not! I've been doing the diet and lost over a stone in weight, I think if I did these types of cheats it wouldn't that effective. If you want to lose weight then stick to the plan!
Well shit! I never thought about throwing the beans in there with the scrambled eggs. That just saved me a lot of clean up time!

Hey Chef Mark,
I'm a new fan. Thanks for not dooming me to a life of eggs from the microwave! ( I actually love to cook, so it's a nice non-stick pan for me too).
However, I've been a little inconsistent on my scrambled eggs lately. Your tips regarding heat will help. I like the butter and olive oil idea.
I too cringed when I heard "No tortillas" in Tim's video. We're raised on Tortillas here in Southern California.

@TheWebLifestyle - You Are Welcome! When you purchase a non-stick pan, try and find a restaurant supply store in your city. Not only will you get a pan that will last since it is "professional quality", but you will pay >$10 compared to twice that amount in a kitchen store like Williams Sonoma, Bed, Bath, and Beyond or any of the upscale mall stores. We have to figure out a tortilla work-around!!!
