This shrimp rice salad makes a perfect lunch or dinner salad in the warmer months, because it's served cold. You can even make this shrimp rice salad in advance, so it's super easy.
For this recipe, you will need:
1 Tbsp. olive oil
1 small onion, finely chopped
2 cups chicken broth
1/2 tsp. curry powder
1 cup white or brown long grain rice - I'm using a basmati rice
1 cup diced green peppers or poblano peppers
4 oz. jar diced pimento
16 oz. cooked shrimp
2/3 cup Italian salad dressing
Heat the olive oil in a medium saucepan over medium heat. Add the onions, and cook until softened. When the onions are translucent, add the chicken broth and the curry powder.
Cover and bring to a boil.
Add the rice, cover, return to a boil, and reduce the heat so the pot is simmering. Cook 20-25 minutes, until the liquid is absorbed.
Transfer the rice to a mixing bowl. Add the green peppers and the pimento. Then add the salad dressing and the shrimp. Give it a good stir, and refrigerate until ready to serve.
This shrimp rice salad makes a great dish for parties, potlucks or even just a weeknight dinner.
