I just got done watching this series. Thanks for posting it! I have fond memories of working for a butcher when I was about 15-16 years old. They were two Austrian guys and mainly worked with pork, sausage and cold cut making. My job was to break down all the equipment and scrub everything down with boiling water every Saturday afternoon, clean out the smoker, grind meat and wait on customers. It taught me so much.
They didn't let me get too close to a knife though!
