Spire Bar & Lounge on the roof top of The Hotel located on 8th & Collins has a unique perspective of South Beach and a coconut inspired drink they call Spire Breeze. Another rooftop haven is Plunge at the Gansevoort Hotel, where you could say their Pink Elephant drink puts the cherry on top, way on top.
