@DarrKadski Well, you are right, but Cynthia is also correct. Soba is an ambiguous Japanese word. It means both buckwheat AND noodle depending on the context. This is why yaki-soba does not usually involve buckwheat noodle. Nor does shina-soba (an old way of saying, "Chinese noodle" in Japanese), which is better known as ramen, have nothing to do with buckwheat.

Any thoughts on how to stir fry these guys without having them break up into itybity tiny pieces? Or should I be looking for a larger/thicker noodle for Yakisoba? :)
