  • Any thoughts on how to stir fry these guys without having them break up into itybity tiny pieces? Or should I be looking for a larger/thicker noodle for Yakisoba? :)

  • @DarrKadski Well, you are right, but Cynthia is also correct. Soba is an ambiguous Japanese word. It means both buckwheat AND noodle depending on the context. This is why yaki-soba does not usually involve buckwheat noodle. Nor does shina-soba (an old way of saying, "Chinese noodle" in Japanese), which is better known as ramen, have nothing to do with buckwheat.
