  • hi maria, what's the purpose of refrigerating the dough?

  • it helps in several ways - the batter is a sticky one, and refrigerating the dough aids in forming the cookies (reduces stickiness, because the distributed butter hardens) and also it helps the cookies to spread less, so you get a pretty lace cookie instead of a very thin mess. If your pressed for time you could freeze the dough for 30 mins instead
