  • maybe i'll have to start present videos about italian cooking like this guy... with the difference that i'm italian and i know what a Tomato sauce looks like. A tomato sauce is basically a plain tomato sauce with no more added else than a little bit of SUGAR and a little bit of SALT. It's a BASE.

  • THEN you can use that base to proceed in a wide variety of other sauces. Like Ragout or Arrabbiata or Puttabnesa, etc etc etc. This guy is simply doing a sauce with tomatoes. The proceeding is almost correct in making an italian-like sauce... BUT:

    1- too few olive oil;

    2- where's the sugar supposed to kill the acid of the tomatoes?

    3- maybe your sanmarzano tomatoes should be a little more mature

    just a little critic...

  • That kind of base is an Italian kind of base for many many variants using almost any sort of v egetable, cereal or meat. the "Salsa di Pomodoro alla Catalana" that you talking about is totally different.

False and True. False beacause tomatoes was native in the Mediterranean, too. True beacause took around 200 years to crossbreed an edible tomatoe starting from the low-solanine breed Columbus brought in Europe.

    Wait a minute! italian cooking? As far as i kown, tomato arrived at Italia in 1544, but it was not used in italian kitchens before 1692 -2 hundred years after Columbus-.That year, in Naples,was published the first tomato sauce with the name-obiously in italian-tomato sauce spanish´s style.
