My playthrough of the duel, without taking a hit.

Commentary:

Level 1 - Simple whether you use the Chicken Leg or not.

Level 2 - Two Heningers will always try to surround you, and because I hate avoiding their dash attacks, it's best to let them get close and then let rip.

Level 3 - As soon as you knock him off the Red Dragon this battle is over.

Level 4 - I hate fighting Skeletons and it shows here. I probably abused jump and dash attacks but the former works so well as an evasive move against these tricky foes that it's almost a requirement.

Level 5 - See level 2. Two Longmoans have exactly the same AI.

Level 6 - I may have gotten lucky here to get on the dragon so quick and to have both Lemanayas end up in the same place...but I'll take it.

Level 7 - See level 2 and 5, three enemies this time makes it a little more tricky. The third enemy will dodge in and out so as long as you catch him in the repeated strikes this is simple.

Levle 8 - Hate these guys. Fortunately this is the only mode they appear in (they would have looked good with Death Bringer). Same tactics as with normal Skeletons, use lots of jumps and dashes. I got very lucky more than once here though, at 3:35 and 4:00.

Level 9 - Difficult but manageable. Both I and the giants abuse the dash attacks so much it looks like this duel was fought on ice! However I can jump attack as well, which is the key to winning this battle.

Level 10 - Very simple if you know how to fight knights. You can either abuse the dash attack since they can't (this is boring and cheap). Or you can go slightly above or below them and then rush in with a combo. I used a combination of both. Dash + C + B also works well if you can pull it off.

Level 11 - Technically the same as level 9, but it takes longer to kill them. This was a nervy battle but you have to love the backwards jog at 6:56.

Level 12 - This might be the final duel but it is not the hardest (that's level 8). There's no pit to kill these guys quickly this time and they will always surround you from either side, so dash attacks and a combo if you can get one in are the order of the day. They're faster than you think which is why I had to abort the combo more than once. Luck struck once again at 8:10.
