This is an extra-trim bottom flat, from the bottom round ( years ago, it was called a gooseneck round with the eye-round and the "heel" attached)
Bottom round roasts are the most popular cut, but you can also cut into stew beef, cube steak, and bottom round steak (swiss steak) and also grind for ground round.
The bottom round roast makes a good pot roast, also good in a crock-pot.
