Omg! Brilliancy! I like Subterranean Filmsick Blues more but 1:44-3:12 is like watching Beethoven or Mozart at work. The speed of the editing is amazing and the Belushi chug ending is perfect!! The experience is like being on set with Orson Welles, Fellini, Kurosawa, Scorsese....nah, Sergio Leone...just the editing, timing and wit is perfect!

Who is the music genius behind this or is it from a movie and what movie?

This piece is from Carl Orff's opera "Carmina Burana". Specifically, it is section 14, "In taberna quando sumus" (When we are in the tavern).
Most people are only familiar with "O Fortuna" from the opera because it's been used in so many films, most notably in John Boorman's "Excalibur".
